The Wine People are a team with over 30 years’ experience in oenology who combine a desire to stay true to the traditional, classic styles of Italy whilst embracing innovative techniques, sustainability and organic and vegan methods. Their modern style Il Volpetto Chianti harvests Sangiovese grapes (with a touch of Canaiolo) from Tuscan Florence vineyards 200-400m above sea level.
The grapes are destemmed and gently crushed before fermentation in stainless steel tanks at a controlled temperature of 25°C for 12 days. Frequent pumping over occurs throughout to extract colour and achieve soft tannins, followed by malolactic fermentation. The juice is left in contact with the skins for 8 –10 days.
This results in a well structured, full bodied, lively and intense wine of ruby red appearance. On the nose there are notes of violet, blackberry and cherry, whilst the palate has pleasant acidity well integrated with dark fruit flavours such as blackberry, plum and blackcurrant, and herbal notes on the finish. Try with red meats, roasts, pasta with flavourful sauce, or mature cheeses.
