This fresh red wine uses organically grown, night hand harvested Carignan grapes from 60 year old low yielding vines in Minervois,. The 15-hectare vineyard is farmed without chemical herbicides or pesticides, with trees continuously planted to preserve biodiversity. Grapes are macerated for three weeks before fermentation with regular pump-overs. The wine is then matured in concrete vats for six months.
Je T’Aime is an intense wine with aromas of dark stewed fruit complimented by warming spice notes. Rich and smooth, the palate shows beautifully balanced freshness and purity of fruit, with notes of crushed raspberry, delicate hints of spice and graphite. Try with duck, goose or pork, garlic or curry dishes, roast vegetables, eggplant, or hard cheeses.
