The most popularly grown white grape of the Rubicone IGT in Emilia-Romagna, the vines for Novita Trebbiano are grown in clay soils, known for its water retention properties during the warm summers. Brief cool maceration on skins is followed by gentle pressing and fermentation in stainless steel tanks, where wine is left to rest before bottling.
Novita Trebbiano is a refreshingly light, slightly off-dry wine that shows an appearance of lemon with plentiful green reflections. The bouquet and palate bring notes of citrus, acacia flowers and a touch of minerality that leads to a zesty and lingering finish. Try with antipasti, light seafood or chicken pasta or risotto, or mild cheeses.
Grapes for the Novità wine range are sourced from Emilia Romagna and Veneto. The collection is made by winemaker Enrico Salvatore of Cevico, one of Italy’s most important wine-making organisations, who own over 6,700 hectares of vines, so consistency of quality is guaranteed.
